Orange-Ginger Glazed Baby Carrots

This recipe makes a wonderful side dish that is appealing to all. The carrots end up being sweet and the ginger adds a really nice boost to the flavors.
Ingredients
  • Ingredients:
  • 1 lb. peeled baby carrots
  • 1 tsp. freshly grated/finely minced orange zest (peel)
  • 1/4 cup fresh orange juice (1 fresh orange is sufficient)
  • 1 TBS butter
  • 1 TBS honey
  • 2 tsp. grated/finely minced fresh ginger
  • 1/4 tsp. salt — to taste
  • pinch of white pepper — to taste
  • minced parsley – garnish, optional
Instructions
  1. Place carrots in a large skillet, cover with water and bring to boil.
  2. Zest (or peel) thin strips of orange peel. Mince. Cut orange and juice.
  3. Reduce heat, cover and simmer until still crisp- and just tender, drain.
  4. Add zest, juice, butter, honey, ginger, salt and pepper to skillet and stir over medium-high heat until sauce evaporates a bit and carrots are glazed. Garnish with minced parsley.
